What’s more affordable than a bag of peas?! This easy pea recipe is light, bright, and ready in 10 minutes. It’s one of my favorite side dishes for spring—you can use fresh or frozen peas to create a great side in minutes.
2. Eating: Greek Lettuce Salad (aka Maroulosalata) 🥗
I had some dill left over last week and went for this traditional Greek salad. It’s simple, clean, and full of fresh flavors. I paired it with salmon, and it would also be great with chicken or a can of chickpeas for a vegetarian twist.

I’m noticing the mint trend as I’m typing this, so now’s a good time to mention this post with 15 ways to use fresh mint.
