What's for Lunch? New Recipe Inside 👉
a.k.a. How to Stay Full and Love Your Midday Meal, Whether You Work from Home or Go to an Office
Hi hi!
This week’s Friday 5 is all about quick hacks for satisfying lunches and a little entertainment to unwind. Plus, I’m bringing back one of my all-time favorite salads because it’s too good to keep in the archives.
What’s Inside:
✅ VIDEO: A veggie-packed burrito recipe that’s perfect for meal prep
✅ Creative work lunch ideas to keep you fueled on busy days
✅ My Black Bean & Sweet Potato Salad (an oldie but a goodie!)
✅ Chelsea Handler’s new book that’s as funny as it is honest
✅ The thriller I just watched that left me captivated
Let’s dive in!
1. Making: Veggie Black Bean Burritos 🌯
I’ve been craving something hearty and satisfying, and these Veggie Black Bean Burritos hit the spot.
I use a bag of cabbage slaw to add a ton of veggies without a lot of work. Make them once and eat well all week. If you make them, store the beans, slaw, and dressing separately, and assemble right before you eat for best results.
The Cilantro Lime Slaw is also amazing on tacos, BTW!
2. Rounding Up: Work Lunch Ideas 🥗
Whether you go to an office or work from home, lunch needs to be easy, delicious, and full of good nutrition to keep your energy high and not weigh you down.
I’ve rounded up some of my favorite quick and healthy work lunch ideas to keep you fueled without the fuss.

3. Bringing Back: Black Bean & Sweet Potato Salad
The Black Bean Burritos reminded me of this recipe, which I had kinda forgotten about, but I’m so glad I remembered it. I wrote this one years ago, and I’m bringing it back because it really is that good. It’s another one that’s perfect for meal prep and loaded with nutrients— you’ll want it on repeat. 4. Reading: I'll Have What She's Having by Chelsea Handler 📚
I’ve read all of Chelsea Handler’s books, and this one is my favorite so far. She writes with an unapologetic and hilarious take on life, love, work, and everything in between. Her new book is raw, real, and just the kind of laugh I needed this week. Highly recommend it.
5. Watching: The Substance 🎬
Ok, I know I’m late to the party with this one, but OMG—have you seen it?! 🫣
Demi Moore delivers an unforgettable performance. I don’t usually love thrillers, but the underlying story about what women will do to stay young is absolutely captivating. Watch it if you haven’t yet—it’s worth every minute.
That’s it for this week! Let me know your thoughts about these recipes or recommendations in the comments.
Cheers!
Elizabeth
